I hate the taste of velveeta normally, BUT.......velveeta/rotel is pretty awesome with fritos.
My mothers neighbor makes a macaroni and cheese w/velveeta that is really really good. She brings it to every party. I made it once or twice but my family didn't like it. Anyhow: boil your mac. for only about 3 minutes (it won't be done) drain it. put the half cooked mac in the the butter greased casserole and begin to pour milk into corner of casserole dish until it covers the mac. Add cut up velveeta all over the dish. Melt a stick of butter and pour that in. Add some shredded cheddar to the top. Cover and bake for a while, then uncover and finish it off in the oven to brown the top. I swear its very good! |

^ thats how a friend of mine's GF makes her mac & cheese. except she doesn't use velveeta, just regular cheese. it not my thing. I want my mac
& cheese to start with a roux.

I suppose this recipe can be considered white trash but we make this dish every holiday, and it's really delicious.
Prep Time: 5 minutes | Cook Time: 20 minutes | Serves: 6
INGREDIENTS 12 oz. uncooked small shell pasta
Preparation Cook pasta according to package directions, drain. Meanwhile, melt butter in 2-quart saucepan over medium heat. Whisk in flour and salt; cook and stir 2 minutes. Warm milk in microwave or on stove top but not boiling. Gradually add warmed milk into saucepan, whisking constantly until well blended and smooth. Cook and stir 3 to 4 minutes or until slightly thickened. Remove fron heat. Stir in cheese, nutmeg and oysters. Toss pasta with sauce mixture. Sprinkle with a 1/4 cup additional cheese. |

I forgot to add that the cut up bread cubes must be presented in a Longaberger basket that matches the PTA mom's Longaberger purse.

I do admit to owning a longenberger purse. I bought it because I was sucked into going to my good friends stupid party. I used it once and it sits in my
closet. Its a fucking hard wooden basket purse!
