Being from Australia, it's hard to gauge how over-rated/under-rated episodes are, as there is no-one to discuss them with apart from public forums....but ill list the most IMPORTANT episode, in my view from seasons 9-18, these episodes changed the outcome of the game, and most probably the eventual winner

Vanuatu- Leann's boot: If eliza didn't switch, she woulda been gone, then the next three (in any order, depending on immunities) would be scout, twila and chris. In the final three ami wins if either ami or leann wins final immunity, if julie wins final immunity, julie wins.....this episode killed off any chance twila had, and regenerated chris' chances

Palau- Season premiere/Jolanda boot: The early signs for the koror domination started right from the outset, amongst ulong's mistakes were: voting out jolanda, underestimating koror and possibly not picking johnathan (but that's debatable as they coulda went for ibraheim or johnathan). Ulong early mistakes, whilst not evident then, were early signs and causes of their gradual and painful (especially for me) demise.

Gautemala- Brooke' boot:/Tribal switch The episode which had the tribal switch-up. If this switch up didnt occur, nakum woulda continued to dominate, they had blake, bobby jon, judd and brandon to counter gary, jamie, rafe and brian, not to mention they also had cindy and danii. Nakum would've had the numbers come the merge, and i don't see a crack in that tribe (except for brooke and margaret, who probably woulda been voted out the 1 or 2 times they go to tribal before the merge). This woulda most likely lead to a bobby-jon or danii win, with steph sneaking into the top 4.

Panama- Dan's boot: Wow, this episode was massive, if dan and sally figured out the puzzle, it woulda been 5 v 5, and terry having the idol, the final five woulda been the la mina five....no doubts, they were equally, if not more tight then casaya....and terry, 95% possibility, woulda won, and no casaya member coming close (not even bruce, la mina wouldn't need him)

Cook Islands- Mutiny episode/ Brad's boot: This episode saw the uniting of the aitu four, the reward challenge they won, bonded them for the rest of the game, seeing their loved ones pictures, photos and letters brought them closer together not to mention the fact in came RIGHT AFTER the mutiny, which made sure that the aitu 4 were out four blood against 'seemingly impossible odds'. On the raro side, they were foolish to trust johnathon and vote out brad, if brad was gonna flip he woulda flipped, but they still voted him out, decimating them only 2 episodes later

Fiji- ive only seen 4 episodes of fiji but i must say that truck deal episode ultimately ended yau man, dreamz and boo's game. It also gave earl a gimme victory, against the most hated castaway in a really bitter jury, and a person whose best assets was an average social game
