I have to agree on Settlers of Catan. It involves strategy and thought but isn't nearly as intimidating as RISK is, nor does it take as long. Depending on the number of people you can also double up and have people work on teams much more effectively than you can in RISK, which also would help alleviate the fears of those who are scared by strategy games.

Cranium also is great, because of the variety that people have been mentioning. The teamwork aspect is also really good because each team member remains involved even with a good number of people, yet none are put on the spot as much as they are in, say, Pictionary or Guesstures, games that some people find very intimidating.


Lastly, I would say try dominoes. I personally love Chicken Foot Dominoes because it's really easy to learn but stays fun, it can be played with as few as three people or as many as a dozen (or even more, I'm pretty sure, though the fun obviously lessens in relation to the addition of more players), and it has a built-in timer, whether you want to start with 12's, 9's, 6's, etc. It's a ton of fun and I've seen people of all ages love it.
