What did I do wrong? i really want some homemade oven baked mac and cheese!

I made macaroni and cheese 2 days ago and it was aweful. It came out of the oven this huge gloppy cheese curdled mess. The dogs wouldn't even touch it.
What did I do wrong? i really want some homemade oven baked mac and cheese! |

Macaroni and Cheese (TC version)
TC ½ stick butter ½ cup flour Heated cream or milk cheese (sharp cheddar, provolone) Make a roux. About a half stick of butter and a half cup of flour. Don't make it dark but cook it until it's not flour gritty. Add some heated cream or milk. Add your cheeses. I use whatever cheese butts I have. Definitely sharp cheddar. Sharp provolone. Stir until melted. Anything really -- but not "american". Blech. Make your noodles. I like barilla. You might want to spray your casserole dish with non stick stuff. I have a nifty pump spray thing that I put olive oil in. Anyway, chop up the scallions. 4 big will do it. Put in a can of chopped tomatoes. Salt and pepper. Maybe some garlic powder and thyme. Put in the macaroni. Pour the cheese sauce over. Stir. Grate some fresh parmesan. on top. Put breadcrumbs on top of that. I've recently discovered these Japanese breadcrumbs that I love. San-something. (she means Panko) Bake for about an hour uncovered at 350. Easy peasy. I added some ham to it, and I actually liked it better before baking it in the oven. GOOD STUFF!! |

similar to mine, but I don't add tomatoes to mine and I just put grated cheese on top, though the panko crumbs sound good

I've never had it without. But I'm guessing it would be. The juice from the tomatoes mixes in with the cheese sauce and gives it a little brightness.

That is NOT macaroni and cheese. that is some kind of casserole. Not saying it's not good, but it would be like calling potato skins "french fries".

I do my mac & cheese like that recipe but I don't use tomatoes and it comes out really good Zip.
