This thread gave me such a jones that I ended up making mac and cheese for dinner. It was a good way to use up odds and ends in the fridge and pantry. I started with the typical roux, then took Smrty's suggestion and used the last bits of some heavy cream and buttermilk along with 2% milk for the liquid. Also got rid of several odds and ends of cheese per TC's suggestion (peccorino romano, cheddar, mozzarella) and I even added half a brick of cream cheese. Didn't have any scallions or tomatoes so I added dried mustard, garlic powder, onion salt and a bit of cayenne pepper and S&P. I happened to have some leftover Panko breadcrumbs that I mixed with a little bit of melted butter for the topping.
Turned out delish and I have a lot more room in my fridge now. |

My aunt, my very southern aunt, made the to die for mac and cheese. She made it cheesy, fluffy, without the cheese being gooey(ugh) or the mac overly eggy, moist, buttery, cheesy. The top would get a golden crust. It was heaven in a pyrex. She used four different cheeses, which was pretty progressive for South Carolina 'round them parts. Lived to be 90 something, bless her heart. Musta been the whiskey in her veins that kept her going.

I use buttermilk in pancakes, biscuits, salad dressing, etc. Don't use it often but happened to have some leftover.
