Because the Guidos/Andrew/Lauren/Kate/Pat were quite stereotypical (this of course excludes probable lesbians Debbie/Bianca and Tian/Jaree, but they
weren't stereotypical either) 
The only people you could say that about are
the Chas (who are naturally like that) and Lynn/Alex and Reichen/Chip (who shouldn't have been cast not because they were stereotypical, but because they
were moralizing assholes and just plain assholes, respectively).
