According to a quick search the lemon has a ph of 2.75 and the lime has a ph of 2.88. I wonder if the lime needs a little more acid added to it to be
preseved properly or if that is close enough.

I found a preserved lime recipe that follows the lemon basics, but calls for slicing the limes and layering them with serrano peppers and ginger.

I agree. I don't see me adding that to my vodka. Ginger might be ok but not in a big quantity.

I think using the peppers would be good with tequila.
Hell, dice the limes up and add them to your sangrita. |

I just think the peppers and ginger would overpower the limes. Especially key limes, which I am thinking would be better for preserving.

With the ginger and pepper it would be great in salads and marinades.

I'm not crazy about ginger, but the serranos sound good.
