Another quick search... I couldn't find the exact ph level of the key lime but the two different websites I found said they have a lower ph (higher acid)
than a normal lime so they should preserve without any problem.

I started my lemons and limes this weekend. Made one jar of lemons with ginger.
Last night I had buffalo ribeyes. I marinated them for 6 hours in shallots, garlic, onions, basil, R's house seasoning, olive oil, a little honey, and blueberry wine (a little sweetness is needed to combat the gamey flavor). The flavor was good but they were a little tough even at medium rare. I think next time I will up the acid and let them marinate for 24 hours. |

After 3 days it is hard to tell the lime jar from the lemons.

I started a jar of limes on Sunday....they lost their green pretty quickly.

Did you do key limes? I didn't see any at the store so I did regular limes. I only did one jar of limes and 2 of lemon.

Key limes are pretty scarce around here. I put the serrano in there too. |

If I like the results I will probably make a few variations next time. Adding the ginger to one jar of the lemons was the only special one I did. I really
want the lime to flavor my vodka so I left it pure.

Tomatoes should never, ever be roasted. Orzo is slimy and disgusting. Did someone confess to actually jarring lemons. I truly feel sorry for suburbanites who
appear to spend HOURS marinating shit and shopping for blueberry wine and insisting that sea salt somehow is better. Is THAT how you validate your empty,
pathetic, useless "lives"???
In Manhattan I just stop at a gourmet shoppe and get a nice fresh piece of tuna, grill it for a few minutes, add some fat free pesto and some garlicked broccoli rabe, and, voila. I would NEVER spend more than 15 minutes preparing a fucking meal. |
