it's quite easy. i take the easy route and do mine with all store bought stuff.

I just browned some chicken breasts in oil, then I shredded said breasts. Threw some garlic and onion in the pan. then put the chicken back. Put in some
organic chicken stock, salsa, and tomatilla sauce. Put a bit of that in each tortilla with some cheese. Rolled them and put them in an oiled baking dish. Baked
for a half hour. Meanwhile, I cooked down some chicken stock, the two salsas and some taco seasoning. Poured that all over the crispish baked tortillas. Topped
with cheese and baked for another 4 minutes or so. Fucking DELISH.

ingredients: tortillas (flour or corn). i use corn cuz well it's what seems right.
enchilada sauce. buy it, duh. i like the red. 1 live chicken. i like to boil mine. add salt to season and shred the hell out of it! cheese. use cheddar or something you like optional ingredients- any veggie take shredded chicken and cheese and stuff the hell out of a tortillia that has been dipped in the sauce. repeat this with as many tortillias as you want to eat and place them in a casserole dish. top with some more cheese and put in oven to melt the cheese and to heat the tortillias. that's the way i do it. you can make them how you like. |

I have this chicken enchilada recipe that's made with green tomatillo sauce. Takes a long time to make so I don't do it that often.

I used to have a really good recipe for chicken enchiladas suiza - I'll have to seach around for it and make that sometime soon too. |

I like my way better than dipping the torillas in the sauce. They are a little crispy and MUCH less soggo.

i do like crispy so i may try an alternate recipe. i've only done mine a few times. even though it's an easy recipe it still takes a little bit of
time. i also substitute the chicken with ground beef. mmmmmmmmmmmmmmm.
