Um.. In Mexico they speak Spanish, but they are Mexicans. Right? In Spain they speak Spanish and are Spanish. Mexicans don't speak Mexican. I have Basque
in me, but you don't see me speaking Basque.. I speak American, because I am in America and American too!

There are made variations on Mexican and Spanish food. Various areas make the same basic recipes, but it is mostly the spices that are different. For
example salsa that is "California Mexican" food uses cilantro, where New Mexican salsa uses green chiles. CA enchiladas are typically rolled, where
NM are typically stacks (like pancakes - flat with ingredients in between.) But you can get rolled here, too.

Yes, but quesadillas are made from tortillas which come from maize. You have a tortilla in Spain and you'll be having a potato and egg frittata.
