reading the recaps, it just became painfully obvious euros can't do cajun. seriously, italian mixed in. No. that's just wrong. so sorry my fabio.

and too many smokes breaks equals no soul from stefan, while carla's hootie love is being felt all over the place. and at least hosass studied and could make a roux. I see carla in the final 2, but I don't know which baldie is with her.

You would think someone with classical schooling in French cuisine could at least approximate a Creole/Cajun dish.

Carla Hall Keeps Her Victory On The Down Low ["Top Chef"]

It's rare that Bravo exec Andy Cohen's blog makes me happy, but he managed to do it on yesterday's post. The Top Chef reunion taped in New York this week and part of the festivities was a viewing party Tom Colicchio threw for all the chefs at Craft Restaurant to watch part 1 of the finale. Carla, ever the trust worthy lady she is hasn't even told her husband of her win at the Mardi Gras party in New Orleans! Andy tells us the heartwarming tale:

"Tom hosted all the chefs and judges for a viewing of last night's episode at CraftSteak and it was so sweet watching Carla's husband watch the show. He cried as he discovered that not only had his wife won the episode, she won a Toyota Venza and a spot in the finale. (Carla is a good soldier and is living by her confidentiality contract!). The restaurant erupted into thunderous applause celebrating her win, and that lady took her well-earned bows."

I think Carla wins. Look at the new promo and when she throws her head to the side?? She wouldn't do that if she lost or if someone didn't like her food, we've seen her at judges table before and she's still as a stone. Maybe it's wishful thinking now that Fabio is gone, but I hope the girl wins it big!

Reading this last night just jumped out at me as wrong, since I live down here and know that Creole cuisine has Italian influences, as well as that of many other cultures. But I was too lazy to look for proof since I'm not an expert.

Anyway, I happened to catch "Taste of Louisiana with Chef John Folse" on PBS Create this morning. This whole series explains the many influences on Cajun/Creole cuisine in Louisiana. And when Folse said the phrase "seven Creole nations" I decided to Google.

I think he DID approximate a Creole/Cajun dish. I think it was pretty clear that all five chefs did well this week (Emeril certianly thought so). Three of them just did a little better than the other two.

I don't know if this has been posted yet but I just read on Amuse Biatch that the three helpers that they usually have for the final challenges every season are past cheftestants; Richard Blais, Casey Thompson and Marcel Vigneron.

I forgot about Marcel somehow making an appearance. This sounds great. I hope the pairings end up being: Marcel/Stefan and Blais/Carla -- two potentially unbeatable teams vs. Casey

I was worried for Carla the minute I saw her pic...Black lady with crazy hair! Then she had witty confessionals, which are always the kiss of death. Then, she got saddled with dessert challenge after challenge.

But our little Crazy Carla might just win this thing. I'm so glad she's been shining the past few weeks. Go Carla Go!
