For single people, it seems almost impossible to finish the whole loaf before it freezes. I usually end up freezing half of it...it will keep longer than a
couple of weeks if you have to...

Triple wrap the bread.
Keep it in the original packaging and just toss that into three plastic grocery bags. Remains edible for 10 to 14 days. Freezer-burn after that sometimes. Single slices thaw in about 10 minutes but if you can't wait even that long you can microwave for 10 seconds, no more. |

Rolls freeze well too. When you're ready to eat them, just rinse them and throw them in the oven for a few minutes.
